How to fix espresso channeling

Channeling happens when water finds paths of least resistance through the puck, causing uneven extraction. Signs: sputtering, uneven flow, a shot that pours too fast, or a watery taste. Causes: uneven grind, bad distribution, a cracked puck, or tamping too hard on one side.

Fix it by: (1) grinding finer - coarser grind causes channeling; (2) distributing grounds evenly before tamping (use a WDT tool or tap the portafilter); (3) tamping straight down with even pressure; (4) pre-wetting with a short pre-infusion. The WDT (Weiss Distribution Technique) - stirring grounds with a needle - is the most effective fix for persistent channeling.
